Last week, I got really bored. The Husband travels for work so boredom is a regular in my apartment. Anyway, I found a recipe for pudding cookies on Pinterest and decided to give them a try. Recipe source here.
Pudding Cookies
4 1/2 c. all purpose-flour
2 t. baking soda
1 1/2 c butter, softened
1 1/2 c. brown sugar, packed
1/2 c. white sugar
2 (3.4 oz.) pkgs. instant vanilla pudding
4 eggs, room temperature
2 t. vanilla extract
4 c. add-ins (chocolate chips, nuts, candy, etc.)
Preheat oven to 350 degrees. Stir together flour and baking soda in separate bowl and set aside; in a large bowl, cream butter, brown and white sugar. Beat in pudding mix until well blended. Stir in the eggs and vanilla. When smooth, slowly add in the flour mixture. Finally, add the "fillers". Bake for 8-12 minutes.
The vanilla pudding mix really gives the cookies a great flavor. I used chocolate chips and butterscotch chips. It makes quite a few cookies (I made almost seventy cookies) but they are so delicious. I baked mine for 9 minutes because I like them to be super chewy.
