Peanut Butter Chocolate Chip Muffins

Hello all!

This chilly night has turned out to be a delightful one. Although The Husband is away, I have been able to make it pretty enjoyable. Baking and Christmas music are two of my favorite things and I was finally able to do both! There is something so soothing about listening to Christmas music while you have something in the oven that fills your home with the aroma of deliciousness. Two glasses of wine doesn't hurt either.

I found this recipe through Pinterest and it was linked back to this blog. It was super fast and I had the majority of the ingredients in my cupboard. I am attending a jewelry brunch tomorrow and hope the ladies enjoy them as much as I did.

Peanut Butter Chocolate Chip Muffins
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup brown sugar
6 tablespoons butter, melted and cooled
1/2 cup peanut butter (I used creamy)
2 eggs
1 cup milk
3/4 cup semi-sweet chocolate chips (I used the jumbo kind because that's what I had)

1. In a large mixing bowl, whisk together the flour, baking powder, salt and brown sugar.

2. In a medium mixing bowl, whisk together the butter, peanut butter, eggs, and milk until smooth. 

3. Pour liquid mixture into flour mixture and mix until just combined. Fold in chocolate chips. 
4. In a paper lined muffin tin, scoop 3 tablespoon size scoops into each muffin cup. Bake in a pre-heated 375 degree oven for 17-20 minutes or until a toothpick inserted in the center comes out clean.

* I only cooked mine for about twelve minutes

Is everyone ready for the holidays? I can't believe it's already November but I am so excited for the holidays. I did all my Thanksgiving shopping yesterday and am ready to cook it into a delicious dinner for The Husband and I.
