Purple Rain

Cold has come to Colorado Springs and that means one word... tights! I love tights. I am not a huge accessory person (although I am trying to change that) so I feel tights add pop to any outfit. I ordered six dresses and pairs of tights from Old Navy last week and my goodies arrived yesterday.

The dress was really warm, which was great since the high today was only forty. I got compliments on the tights which makes me super excited to wear the other fun colors I got. I tried to buy dresses that weren't quite matchy with the tights but would still look put together without being too funky.

One of my favorite things about the cooler weather is the amazing scents Bath and Body Works comes up with. I stopped by on Monday and bought two candles that make every evening perfection with their scent. Since I don't have a fireplace candles are my insta-cozy go to. I chose the sparkling icicles one and The Husband chose the frosted cranberry.

Apple Brown Betty

Fall is the season of baking. I don't know what it is about the crunchy leaves and chill air that makes me want to be June Cleaver. This recipe (provided by The Pioneer Woman) was perfect and easy. It made the house smell delicious, The Husband loved it, and I got to use my adorable Martha Stewart pie dish that has not been used since I bought it last year.

Apple Brown Bettty
3 whole apples
7 slices wheat bread
3/4 cups salted butter
1-1/2 cup packed brown sugar
3 to 4 Tablespoons water

1. Peel and thinly slice 3 apples. Slice bread into a small dice, or tear into very small pieces.
2. Coat a small baking dish or pie plate with butter. Then add 1/3 of the brown sugar, 1/3 of the apple slices, and 1/3 of the breadcrumbs. Repeat these layers twice more, ending with breadcrumbs.
3. Slice butter and lay slices all over the top of the breadcrumbs. Sprinkle dish with water and a little more brown sugar, and bake in a 375-degree oven, covered in foil, until done – about 45 minutes. Remove foil in last few minutes of baking to brown the top.

When September Ends...

This month has been pretty cray-cray. It started off with me being very sick and our apartment flooding due to all the Colorado rain. Luckily, everything was fixable and I started feeling better a few days after but it was a very stressful experience. We will be moving in November and for some reason it saddens me. I think it's because this is the first home The Husband and I have shared as husband and wife.

In super fun news, I joined a volleyball team and have been loving it. The first few times I was so sore I  couldn't walk up the stairs after but I haven't felt that sore in a long time and it was wonderful. I'm not super skilled but I have the bruises and scabs that show how hard I hustle and I think that's all any teammate can ask for.

Now in SUPER DOOPER ACA-MAZING news, my incredible husband completely took me by surprise and bought me tickets to Britney Spears in Las Vegas for February. I knew the tickets were going on sale and figured I would request them for Christmas. He then sent me the confirmation email because he was online buying them the moment they went on sale! I pretty much freaked out in the middle of my office and the proceeded to do the Oops... I Did It Again dance with a fellow Britney lover.

Although September has flown by, I am excited for some real fall weather. Colorado Springs always looks the most beautiful in the fall with all the different colored leaves and the crisp mountain air. It's my fave time of year!

Rumor Has It....

That Justin Timberlake will be joining N'Sync at the VMA's this Sunday! This is the beginning of all my fan girl dreams! It makes me so giddy it's not even funny. I have been telling The Husband for years that I would sell his kidney to see N'Sync together again.

Although I love me some SexyBack, all I have wanted as the almost thirty-year-old, bubblegum pop lover that I am is for this moment to come true. I have secretly wished that people would stop offering Justin Timberlake movie roles so that he can have enough time to do a new N'Sync album that turns into a world tour. Maybe they'll re-do Tearin' Up My Heart now that JT can actually fill out that tank top.

Easy Meatloaf

Last weekend I had the biggest craving for fall. All I wanted was to turn on the oven, light some pumpkin pie scented candles, and watch Hocus Pocus. After looking through my recipes, I decided it was a meat loaf and mashed potatoes kind of night.

I wish I remembered where this recipe is from, it was written on a piece of scratch paper. It is easy, delicious, and I have no pictures because as soon as it is ready The Husband is all over it. The chopped up onions make every bite and the smell when you mix all the ingredients together is to die for (just don't eat it).

Easy Meatloaf
1 1/2 pounds ground beef (I use ground turkey)
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
1/3 cup ketchup

1. Preheat oven to 350 degrees
2. In a large bowl, combine the turkey, egg, onion, milk, and bread crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan.
3. In a separate bowl, combine the brown sugar, mustard, and ketchup. Mix well and pour over meatloaf.
4. Bake for 1 hour.

1. I once fell off a donkey.

2. Oranges freak me out. Just looking at one makes me want to throw up and run yet I enjoy orange juice and eat grapefruit.

3. I once caught a spatula on fire and threw it outside in the snow hoping my parents wouldn't notice. They noticed.

4.My tongue is freakishly long. Like REALLY long.

5. The one time I skipped school I hatched a plan that involved my friend calling the school and pretending to be my mom saying I could walk home because I was sick and she couldn't pick me up. I got "officially" checked out because I didn't dare miss any assignments for fear it would lower my grade. I completed them that night and turned them in the next day.

6. Although I'm a girly girl, my favorite movie ever is Jurassic Park.

7. The engine in my first car basically blew up.

8. When I was in second grade a mirror fell on me and crushed one of the discs on my back. I couldn't walk for a while.

9. I have crazy strength when it comes to closing jars or bottles of soda. No one can ever open them (including me).

10. I can flick really hard. I flick so hard I bruise people. I don't know how, it's a gift.

Motivation Monday- It's Hard

Being healthy is hard. It's time consuming and involves doing a lot of things you don't want to do. I don't want to go to the gym after I worked all day. I don't want to plan my meals for the week when I can just eat a frozen pizza. Basically it's a list of I don't want to's...

When I eat healthy, I have to really plan out my meals. What am I going to eat for breakfast? What am I taking to work for snacks and my lunch? What is easy to cook for dinner after eight and a half hours of work? These are the questions that mess me up.

I have to be sure that my grocery list is made with the intention of me eating well. However, once the spinach and fruit have disappeared, all that is left are the snacks (aka junk) The Husband likes. Suddenly, ordering a pizza or Chinese seems like a great idea. Stopping at Subway during my lunch is easier than trying to make something healthy out of Dorito's and an onion. And since I already messed up my healthy eating, might as well enjoy the weekend and spend my time dipping cheese covered bread into sauce at some delicious, portions way too big restaurant.

This is when I fail. When I don't have immediate access to healthy food or the time to plan out my meals. This is what I need to learn to push past and keep eating well. I can alway feel the change in my body right away. Why do I let little things stop me from continuing? Why do I act as my own enemy and rationalize when I eat things I know will hurt my goals? 

When I decided I wanted to lose weight, I didn't want it to be something that could go away. I didn't want to take a magic pill or only eat grapes and water. I wanted it to be about changing how I eat. Although I feel I have done a great job in changing my eating habits, I still have those moments where I'd rather pick up the phone and order something than go to the grocery store and buy ingredients for a salad.

I just need to be sure I buy enough good stuff for the whole week and keep my goals in front of me. I am running another race this coming Saturday which I'm so excited about. I have a delicious looking recipe I'm excited to try this week that will make breakfast easier. Just take it when one day at a time...

Motivation Monday- First 5K

I can officially cross a 5k off my bucket list! The Husband and I entered the Garden of the Gods 5K a few weeks ago. We didn't really train but I figured whether I ran, walked, or crawled didn't matter as long as I finished. My only two goals were that I didn't want to be last and I wanted to finish in less than an hour. I am happy to say I accomplished both goals. There were moments when I felt like throwing up and others where my body really hated me but at the end of the day I am pretty damn proud!

What really surprised me was the support for one another within the running community. It felt great to hear someone call out my number and tell me to keep pushing when I thought I couldn't go anymore. People kept telling complete strangers that they were rocking it and were almost to the finish line. As a newcomer to the whole thing, it was wonderful to see people support each other. When I almost started crying because my bad knee felt like it was going to explode a woman told me to just keep looking forward and just think about the end so I did.

It really was an amazing experience and I am so happy I finally got over the excuses and just went for it. Doing this with The Husband was even more special because he did AMAZING and was waiting with open arms and a cup of water when I crossed the finish line. He literally caught me when I thought I was passing out but we did it together and that is something I will never forget.

Critically Acclaimed

Everyone has an outfit that makes them feel pretty and on point. I bought this dress a few weeks ago and was attracted to the bright yellow that just screamed summer fun. I have it in white and navy but the yellow is my favorite. Every time I wear I it people comment. The guard at the gate of my job, my co-workers, ladies in parking lots.  I think the navy blazer makes it the perfect, fun outfit to be professional and fun at work.

Cuckoo for Banana

I went to Banana Republic today to take advantage of their sale and the twenty dollar coupon I received a few days ago. I was in the need for shorts and cardigans and am glad to say I found some of both! The dresses kept calling my name but I was able to tunnel vision and walked out with just one unplanned item. Plus, they gave me more coupons for June so I will definitely be back.

We went shopping for The Husband yesterday at Men's Warehouse and it was an eye opener. I did not realize what went into a man looking sexy in a suit. The measuring and altering were amazing. I wish everywhere I shopped did that. In the end, he got two suits that are sure to make him look very Mad Men in the office.

Weekend Adventures

This weekend was pretty great! I got to do some shopping and had a much needed date night with The Husband. The weather was rainy so our Saturday plans had to change. We were going to go to a baseball game but the wind and on and off rain changed our minds.

Instead, we decided to go to the movies and for some fro yo. I love iTop it and usually get the same thing every time but I expanded my horizons and went for something different. As for The Great Gatsby, I was very pleased. The book is my absolute favorite and it's definitely better than the movie but I was impressed with the acting and I love the way Baz Luhrmann plays with color and detail. Plus, I have been listening to the soundtrack all weekend. I love how they put modern music to such a specific time and made it work.

Today was filled with shopping. I have made it my goal to accessorize more and not spend the summer in flip flops. Today I wandered into Payless just to browse and found these fun shoes for summer and these bracelets. Yellow gold has never caught my attention before but I have started to try and incorporate it into my wardrobe and thought these bracelets would be a good start.

I also stopped by Old Navy and ended up buying these three dresses. I already have the eyelet dress in white and navy but the yellow was so happy that I had to get it! It didn't hurt that it was on clearance. The one at the end I got in a coral color and thought it would be fun for a casual lunch or to run errands. I love the striped one (mine has thin yellow stripes as well) and can't wait to put it on.

It has been perfect for all the rain we've been having lately. However, I did get called Carmen Sandiego a few times. Luckily, I loved that show.

Penne Sausage Alfredo

I call this my "Single Lady" dinner. Why you may ask? I am obsessed with pasta (any Italian food really). However, even though I could eat it every single day, The Husband will not allow it. When he first started traveling for work I made this all the time. He was gone so much he joked that I was single and I started telling him this was my dinner when he was gone.

It's so easy but something about it makes it seem like a legit Pinterest meal. I've made it for people who tell me it's delicious and ask for the recipe. Although I would like to pretend it was full on gourmet and I'm just that much of a domestic goddess, I can't lie very well so there's no point.

Penne Sausage Alfredo
1 box Barilla pasta (I use the bow tie kind)
1 16oz jar alfredo sauce (I use classic by Ragu)
1 package of sausage links (I use Johnsonville links) 

1. Cook pasta to your liking. I usually let it boil a few minutes so it's super soft. Drain.

2. At the same time cook sausage in a separate pan until done. Drain. I usually cut up the sausage into circles.

3. Warm sauce.

4. Mix everything together and serve. Add some shredded parmesan for extra deliciousness!

New Kitchen Toy

I feel dorky because I am so excited about this! I think it's a sign of growing up when you start getting excited about things like home decor or, in this case, kitchen appliances. As I had mentioned before, I've really been into smoothies lately. They are such a perfect and easy way to eat healthy and still enjoy something delicious. Plus, I love that I control what goes into it.

Unfortunately, my blender did not feel the same way. It had been making weird noises and the other day it threw in the towel. It was 5:00 a..m. when it decided to stop working and instead shoot parts of itself at me as I tried to control the noise out of fear The Husband (or neighbors) would slaughter me. I was left with no smoothie and a mess of black dust and chunks to clean up.

Yesterday, we decided to take the plunge and buy a Vitamix blender. Although it was pricey, it does so much that I feel the cost is justified. It can knead bread and make hot soup right in the blender. Plus, the blades are made for handling whole fruits and chunks of ice.

It came with this cookbook full of delicious looking recipes and has a seven year warranty. I really am so excited to start using it and step up the healthy eating. I've never been a huge fan of fruits (i just barely had grapes and strawberries for the first time in like eight years) but I can drink a smoothie with almost anything in it. 

The best thing is that it's so easy to clean! After use, you just add warm water and a little soap to the blender and turn it on. It basically cleans itself. Now that I sound like a Vitamix sales representative, I'm going to stop this post. Before that, please let me apologize for the floor picture. My kitchen is basically a cave so pictures there are always weird.

Spring Time Saturday

Today has been such a wonderful day. I got my first ever massage and it was AMAZING! I have never been that relaxed in my life. It was the perfect Saturday activity after a very hectic week at work (but I loved every minute of it). The woman that did it was great and she got the pressure perfect from the start.

Another wonderful thing about today is the weather. As previously mentioned, Colorado weather is pretty bipolar so we have to enjoy the nice days as much as we can. Here's what our Colorado Springs weather has been. The bottom one is today!

We decided to venture out and I bought some stuff that I was out of. However, the CC cream is brand new. I've been hearing so much about CC cream and BB cream and decided to stop by my local Clinique counter and ask some questions. Although I want to eventually try the BB cream, I chose the CC cream in light medium because I was told the coverage is a little less intense and it's not as heavy. Hopefully it's as amazing as people say it is. I did buy something else that I'm SUPER excited about but will write a separate post for it.

After the shopping and massage, The Husband and I enjoyed some delicious lunch at Noodles & Company. Noodles always reminds me of my college days and it was the first place The Husband and I ate when we moved to Colorado Springs!

The Husband is going out of town tomorrow so I am trying to get in as much couple time as I can. This month will be crazy for both of us (he'll be gone most of it) but at the end is a much needed vacation. Hope you enjoy your weekend!

A Little J.Crew

The other day I decided it was time for me to buy my domain name. That's right! Lilliesandpinkchampagne is officially mine (for a year at least). No more blogspot in the name! I really want to give it a makeover and do all kinds of things to it but I am challenged in that department. I read these things on how to do stuff and it sounds so easy but then it's not (for me anyway). Hopefully I can find a way to beautify it myself before I have to pay up and have someone else do it.

Anyway, as often happens when The Husband is gone, I got bored and decided to do some online shopping. I saw this on Rachel Parcell's (from The Pink Peonies) blog a while ago on a post she did for a gift guide. It looked so cozy and warm but I never got along to buying it. So of course since I was buying it I decided to buy two! I'm kind of happy Colorado weather is bipolar and there's still a chance to wear them.

Oldie but Goodie

This week started off with about a foot of snow. Thankfully, Ruby has four wheel drive so it was a pretty smooth drive, even thought it took about an hour. I'm glad to report that everyone is right and it makes all the difference in the world.

Wednesday was Administrative Professional's Day, something I didn't know existed. My boss was amazing and got me these gorgeous flowers and took me to lunch. I am pleased to say my cubicle smells amazing. Now I just need to put up a few personal touches.

Yesterday was the perfect spring day. It was so nice to wear an eyelet dress with no tights or anything. I don't usually wear nail polish on my fingernails but For Audrey was screaming to get out and be seen. I bought it a few years ago and I still love it!

Going Green

I did something I never thought I would. I drank something that was guacamole green. Pinterest has a variety of green smoothies but I always figured a person would have to be nuts to drink them. However, I saw one and thought "with a few variations, this might be tasty."

I'm excited to say I was right. The smoothie was delicious. Even The Husband loved it and he was giving me the strangest looks as he watched me put spinach and a banana into the blender. It kept me full for hours. Rather than the snack I thought it was going to be, it became my dinner. This will be probably become a breakfast regular.

Amazingly Green Breakfast Smoothie
1 banana
1/2 cup of strawberries
1/3 cup non-fat Greek yogurt
2 cups of spinach
1/2 cup of orange juice (I used Simply Orange)
1 cup of ice

1. Put all ingredients in a blender. I put the ice at the bottom.

2. Blend. My blender has a smoothie button so I used that.

3. Pour and enjoy!

I Ain't Afraid of No Ghost

So much had been going on lately and I am so excited to finally be able to blog about it! Last weekend started off promising but ended with our only car breaking down. In two hours we had to make the decision to buy a new car. After a long week of processing everything, Ruby officially became ours on Wednesday.

After all this, The Husband and I decided we were going to explore Colorado a bit and head up to The Stanley Hotel. For those who don't know,  The Stanley was the inspiration for Stephen King's book The Shining. Our original plan was for it to be a day trip but we ended up staying the night. We signed up for ghost story time and found out the room we were staying in was one of the haunted ones!

When we first checked in, The Husband and I decided to take a nap. When we woke up he complained that the pillow was uncomfortable and he wanted a different one. We turned on the TV but it turned off by itself twice so we gave up. We went on with our day and showed up for story time. The woman running the show was named Scary Mary and would go floor by floor telling us about the hauntings that happen there. 

The people in the room next to us asked if their room was haunted but Scary Mary said, "no, but a room close to you is. Is anyone in room 311?" The Husband and I looked at each other and raised our hands. I guess what happens is the guests in this room complain about the uncomfortable pillows and then hear a knock in the middle of the night and someone announces themselves as a bellman. The guests get angry and see a bellman through the peephole holding pillows, but once they open there is nothing there.

Aca-mazing News

I got a new job! My first day is tomorrow and I am so excited to be doing something new and learning how to do a different type of job. It will be my first ever Monday-Friday, nine to five job. It will be great to have weekends and holidays off and be able to make plans with The Husband.

Since I am going from a job where I wore polyester (gross) to one where I wear my own clothes, I had to make a trip to Banana Republic yesterday. The woman was so helpful and she did not laugh at me when I said I was going for a look that was a cross between Kate Middleton and Zooey Deschanal. I got some cute pencil skirts and an adorable peplum top that I plan on wearing tomorrow. Plus, Fashion Friday will be a lot easier now that I have to look good every day as opposed to just Friday and Saturday.

My only small concern is that I am going from a job where I ran around and lifted things for six to eight hours a day to a desk job. I will definitely be hitting the gym more and must sign up for the fitness evaluation before I gain thirty pounds back. I plan on packing a bag and just heading there after work so hopefully that will help.

Fashion Friday- Birthday Edition

On Wednesday, I turned 28. It was a fun day but also kind of traumatic. My ten year high school reunion is this summer and I don't quite know how to wrap my brain around that. Anyway, it was a little hard because it was the first birthday I have ever spent away from my family but their phone calls were amazing.

Other than that the day was lovely. I did have to work and go to a stressful job interview but The Husband saved the day (as always). I was excited to wear a new dress and go to dinner at one of my favorite places.

I wish the pic of the dress was better so you could see how adorable it really is. It's sparkly and I just love it. I do wish I had high heeled black boots but I will just have to change that ASAP. Although it was about twenty degrees outside, I felt pretty cute so that kept me warm.

As I mention in my about me, The Husband and I got married on Leap Day 2012. Because of that, we decided to celebrate on March 1st which is today! His birthday is also in February along with Valentine's Day so I'm excited to see how we continue the celebrations.

Motivation Monday- The Tools

After a WONDERFUL and much needed trip to Las Vegas I am back and ready to get back on track. Although I have been slacking off for two weeks now (I'm so ashamed), I have not gained any weight so I am very grateful for that. Plus, I went over a month without eating out which gave me a great sense of accomplishment.

One thing that has helped is having tools that allow me to make changes and stick to them. This is about changing my lifestyle not just dieting and losing a few pounds. I've already talked about my trusty notebook and how it keeps me in line when it comes to eating. Here are a few other things that help or I am hoping will be beneficial:

1. RunKeeper app- I am the type of person that has to know how far I've gone and how far I have to go. Although running outside make me feel accomplished, I don't like not knowing how far I have to go to reach my goals. My friend introduced me to this app and I can't wait to use it. You can find friends and keep each other motivated!

2. Fridge full of the RIGHT foods- As I have said before, I lost almost thirty pounds just by changing the way I eat. I feel that is the reason why even when I stop working out, I don't gain the weight back. Things like spinach, bananas, peppers, strawberries, and other veggies and fruits have been life changing.

3. Setting goals- Nothing feels as great as reaching a goal. Even when the goal is small (such as run twenty seconds longer), it makes me feel accomplished. The thirty pounds were a combination of "just two more pounds" and "get to this weight in a month." Every time I reached one, I felt like stopping was a silly idea and kept eating my salad and avoiding the pizza.

4. The Husband- I am lucky enough to have a husband that tells me I am beautiful and sexy every day. There are days when I don't want to hear it but he will get in my face and tell me. However, he understand that how I see myself is very important and has been so supportive. Not once did he complain when our fridge went from boxes of takeout to veggies and fruits.

My goal for this week is to sign up for my free fitness evaluation at the gym. I don't know why but it terrifies me. I have never been able to do a sit up. I get positioned for one then roll over like a rollie pollie. Hopefully, I will suck it up and next Monday I can talk about the evaluation.

Peanut Butter Banana Smoothie

I found this recipe in a fitness magazine (I don't remember which one) and it is amazing. Simple, delicious, and perfect after a grueling workout. The cinnamon is my extra ingredient.

Peanut Butter Banana Smoothie
8-10 ounces skim milk
1 tablespoon natural peanut butter (I like Jif)
1 banana
4-6 ice cubes (depending on how thick you like it)
A dash of cinnamon

1. In a blender, add all ingredients and blend until smooth.

Ta-da! One step! You can't beat that.

Motivation Monday- Jock Jams

Nothing motivates me more than the right song. In any situation, the right song can help me push through and it is no different with working out. I would be lost without my iPod at the gym. If I'm running outside or hiking I don't need it but it is definitely a must have in the gym.

The two songs I have been listening to the most while working out (and I'm a little ashamed to admit it) are One Thing and What Makes You Beautiful, both by One Direction. I don't know what it is, they just make me want to get up and dance so listening to them on the treadmill is the perfect energizer. Plus, it takes me back to a time when 'N Sync and BSB ruled the world (and I was lot thinner!).

P.S. It has officially been ONE MONTH of no eating out! Not to toot my own horn but I am pretty damn proud. It has not been easy but a little extra work on my part has made it possible. Planning meals  at the beginning of the week has made all the difference.

Fashion Friday- Floral and Black

I bought this shirt at Target and I am pretty much obsessed with it. When I originally saw it, I wasn't really sure I liked but once I put it on I fell in love. It is so comfortable and I love the fit. Plus, the bright flowers give me hope that this crazy cold weather will start saying it's good-byes.

Corn Dog Muffins

I have been a blogging slacker. Fashion Friday was a no-go when my day involved me running through the grocery store parking lot in high heeled boots, pushing a cart, and dropping grapefruit as I ran (don't ask!). Although I met my goal of going to the gym last week, this week I have been a big slacker and the thought blogging about motivation made me feel like a fraud.

I did however, make something new for the Super Bowl, hence this post. They were super easy and really appealed to the child within The Husband. The recipe is from The Pioneer Woman because she is amazing and makes me want to live on a ranch.

Corn Dog Muffins
1/4 cup shortening
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 teaspoon salt
1 cup buttermilk
1/2 cup milk
1 whole egg
1 Tablespoon baking powder
1/2 teaspoon baking soda
6 whole hot dogs

1. Combine cornmeal, salt, and flour in mixing bowl. In separate bowl, combine buttermilk, milk, and egg.

2. Add baking powder and baking soda to wet ingredients then stir into dry ingredients.

3. Add 1/4 cup melted shortening, slightly cooled , stirring constantly.

4. Grease muffin tins and fill them a little more than half full.

5. Cut hot dogs into pieces, about one inch, and place in center of each muffin.

6. Bake about 10 to 12 minutes. Serve with ketchup and mustard.

Fajita Mix

In my quest to eat better, I have been re-evaluating the foods I love and trying to make changes. Fajitas are one of my faves but the tortilla, cheese, and sour cream are not tummy friendly. I was really craving them and decided to make my own mix. It was super tasty and The Husband kept repeating that he loved it.

Fajita Mix
4 peppers (any combination of green, red, or yellow will work)
Half a white onion, chopped
8 oz white mushrooms
2 cups of chicken

1. Take a tablespoon of butter and cook onions and mushrooms for a few minutes until onions start to thin.

2. Take the chopped peppers and add them to the mushroom and onion mix. Cover and cook on medium for about ten minutes depending on how soft you would like the veggies to be.

3. Add chicken. If you have time, you can cook your own chicken and cut it up but I used some of the Tyson Ready Made chicken.

4. Cook for another five minutes or so.

5. Serve in a bowl and add sour cream or shredded cheese if you would like. I did not add sour cream to mine which caused The Husband to tell me I had become a stranger to him.

Ta Da! Dinner made super easy.
