Turkey, Black Beans, and Tomatoes Mix

I got this recipe from my friend Colleen a couple months ago. She does emeals and cooked it up one summer day before we went to the pool. It was delicious and I have cooked it quite a few times since then.

You can also cook up some rice-a-roni and mix it all together but since I'm trying to be healthy (and I LOVE rice-a-roni and will eat it all), I decided to try it with lettuce. It was supposed to be a wrap but my lettuce struggled.

Also, I forgot the actual name of the recipe so I just made the title up. Sorry!

Turkey, Black Beans, and Tomatoes Mix
1 lb. ground turkey
1 15oz. can black beans
1 14.5 oz can of diced tomatoes
Some lettuce (washed)
Sour cream
Shredded cheese

1. Cook turkey until done.

2. Drain both black beans and tomatoes. Add both to turkey and mix. I usually cook it on medium for about five minutes.

3. Get your lettuce leaves ready. Although this is a wrap I should mention my lettuce is usually too disfigured to neatly wrap around anything. I don't know how P.F. Chang's does it.

4. Get your frenemies ready (sour cream and cheese). Although, they add so much flavor to a meal, I tend to overindulge and then things aren't as healthy as they should be. 

5. Set lettuce on plate and put some of the turkey mixture on top. Top with shredded cheese and sour cream. Enjoy!
