Mushroom Cap Pizza

Sunday is football day around here. I wasn't always a fan but The Husband has really turned me into one. I look forward to Sunday every week. We always make yummy snacks, tasty drinks, and just cuddle on the couch while yelling at the referees.

As delicious as it all is, I was looking for an alternative to the usual greasy foods. I was browsing Pinterest and saw a mushroom cap pizza recipe on Skinny Mom. They were super easy to make and were very filling. The Husband loved them and requested that we add them to our regular rotation of dinners.

I didn't really follow the recipe and they still turned out great. I feel most of the ingredients depend on what you like and how much. Clearly you want it as neat as possible so that it all stays inside the cap but getting dirty every once in a while is good for your soul.

Shopping up the veggies


Mushroom Cap Pizza
2 portobella mushroom caps
Extra virgin olive oil
Pizza sauce
2 Tbs italian seasoning
2 cups mozzarella cheese
Diced bell peppers
Chopped onions
Turkey pepperoni

Ready to bake
1. Preheat oven to 375 degrees

2. Spray a baking sheet with non-stick cooking spray and place mushroom caps top side down on pan. Brush them lightly with olive oil.

3. Add pizza sauce to each cap and sprinkle with italian seasoning.

4. Sprinkle cheese and add remaining toppings.

5. Bake 15-18 minutes.
