Oatmeal Chocolate Chip Cookies

I love cookies. I just do. However, I like simple cookies and don't like when they have eight million things in them. Sunday was the perfect day for some baking. Football was on, we had Monday off of work, and the weather was dreadful. I looked through my Pinterest to find something simple and delicious to make. The Husband saw the oatmeal cookies and insisted I make them. 

The cookies were really easy and they came out great. Shape wise they were the best cookies I have ever made. I always worry about baking new things because of the altitude but these came out awesome and I took the leftovers to work on Tuesday. You can always count on Pinterest and All Recipes to get you through the insane urge to bake. 

Oatmeal Chocolate Chip Cookies
1 cup of softened butter
1 cup brown sugar
1/2 cup of white sugar
2 eggs
2 tsp. vanilla
1 1/4 cup all-purpose flour
1/2 tsp. baking soda
1 tsp. salt
3 cups of oats
1 cup chocolate chips

1. Preheat oven to 325 degrees. 

2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla.

3. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, and chocolate chips. Drop spoonfuls onto cookie sheet.

4. Bake for 11 minutes. Allow cookies to cool for 5 minutes before transferring to a cooling rack.

Motivation Monday- 4th and Inches

I have been going to my trainer since about May. I have reached a point where I no longer fear what she might ask me to do because I have proven to myself that I can do things I thought my body would never allow me to do. However, I was really nervous for my appointment with her this morning.

Why would I be nervous? She already has me planking and lifting weights I was convinced would kill me and rip my arms right out of their socket so what more could I be afraid of? Today was the day she was going to do my measurements again. It worried me that all the confidence I had developed would vanish simply because of some numbers on a tape measurer.

I kept telling myself that I have been working hard, doing things that I never thought I would do, and it didn't matter what the numbers were because I can see and feel changes. I told myself not to focus on the numbers because I know that my clothes have been baggier and other people have noticed as well.

I am beyond ecstatic to report that there have been some pretty big (if I do say so myself) changes. I lost five inches off my waist and 4.5 off my hips. My arms, thighs, chest have also shed some inches. Tears almost came out because it felt like official validation that my hard work is paying off. Eating the same thing Monday-Friday is now worth it (but still not yummy).

Motivation Monday- Pink Deliciousness

The first step to getting fit is eating right. I love smoothies and find them to be an easy way to stay on track and still feel full. I just tried this pink smoothie recipe and I was shocked at how good it was. It's super easy, full of good stuff, and you will feel more than satisfied afterwards.
