Christmas Buzz

I hope you all had a wonderful Christmas. Mine was incredible and I am so sad it had to end. After being away from family last Christmas, we spent all weekend decorating cookies, eating, watching movies, and drinking libations with them. It truly was amazing to be around them so much.

The Husband and fam spoiled me and basically equipped my kitchen. I got lots of Pioneer Woman goodies from my parents and sisters and The Husband got me a pink KichenAid mixer! I screamed so loud.

Yesterday was the first day I had time to use it and I absolutely love it. I tried a recipe that came in the manual and it was delicious. It was my first ever cake from scratch so I'm pretty proud of it. I got The Husband a Keurig so we have been enjoying hot chocolate and cake.

White Cake
2 cups all-purpose flour
1 1/2 cups of sugar
3 tsp. baking soda
1/2 tsp. salt
1/2 cup shortening
1 cup low-fat milk
1 tsp. vanilla
4 egg whites

1. Combine dry ingredients in a bowl.

2. Add shortening, milk, and vanilla.

3. Mix for about a minute to combine then add egg whites. Mix until smooth and fluffy.

4. Pour batter into a 9 inch round baking pan. Bake at 350 degrees for 30-35 minutes.

Buttercream Frosting
1/3 cup of butter, softened
1/4 cup evaporated milk
1 tsp. vanilla
1/4 tsp. salt
4 cups powdered sugar, divided
Low-fat milk, if necessary

1. Beat butter until creamy.

2. Add evaporated milk, vanilla, salt, and 1 cup powdered sugar. Mix at stir speed for about 30 seconds. Scrape bowl and mix again at speed 2 for about a minute and a half.

3. At stir speed gradually add in the remaining 3 cups of powdered sugar. Mix until smooth. Add milk, one teaspoon at a time if needed.
