Strawberry Cream Cheese Cobbler

The only word to describe Utah's weather lately is tease. We had two weekends in a row that were absolutely beautiful. Not too hot, not too cold, and the perfect breeze to contrast the heat of the sun. It was magical.

On Wednesday, it decided to start snowing/raining and forcing everyone to pull out the thicker jackets. Our winter has been very mild this year and we need all the water we can get. I love winter and snow but not after two weeks of wearing flats and jackets that don't weigh two tons.

Anyway, since I was already in a spring mentality I bought the stuff to make one of my favorite spring/summer desserts. I don't know if it's the strawberries but something about this cobbler screams sunshine, fresh grass, and a twirly skirt.

It's super easy to make, doesn't need a ton of stuff, and I promise you people will love it. It starts by pouring melted butter into the pan. How could you go wrong with that!? I have a subscription to All Recipes and found it in there so I'm sure it's also online if you look for it.




Strawberry Cream Cheese Cobbler
1/2 cup melted butter
1 cup milk
1 Cup all-purpose flour
1 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 cups fresh strawberries cut in halves
1 4 oz package of cream cheese, cut into pieces

1. Preheat oven to 400 degrees

2. Pour the butter into the bottom of a 9x13 baking dish

3. Mix all ingredients except strawberries and cream cheese together in a bowl; pour over the butter in the baking dish.

4. Arrange strawberries in a layer int he baking dish. Dot the strawberries with the cream cheese pieces.

5. Bake for 30-45 minutes
